Mark This Book for Monday Munchies: Making Cupcakes With Lola!

Hey there! I've been dragging a bit this Monday since I didn't get to sleep much last night, which tends to happen when I work morning shift after a few days off. But now, finally after dinner I've edited some photos for this entry, which is a combination of Mark This Book Monday and Monday Munchies!


Today I'm recommending a recipe book for cupcakes only, that came highly recommended from the very awesome Alma from Alma's Cupcakes when I asked her what book she'd recommend since I already had Cake Days, Primrose Bakery and Eat Me!, and without a doubt she recommended "Making Cupcakes With Lola", and was she right!


As much as I love the Primrose Bakery book and the Eat Me! books, and the Eat Me! book is full of awesome recipes, I adore this one cause it's JUST cupcakes, and it's the kinda book you open and start thinking "I wanna make this" *turn page* "and this!" *turn page* "ooooh, and this!!" and you can go on like that till you run out of pages! I usually put business cards to mark pages for recipes I like and want to make, and I can barely close the book with the amount of cards marking recipes! I think I need to get coloured post-it to avoid damaging the book!





Two of the first recipes I wanted to make and that jumped to the first line as soon as I saw them where the Masala Chai tea cupcakes and the Matcha Chocolate cupcakes! I love tea, and I love chocolate, and I love having chai when I'm in India so those two were a MUST!





















So, last Friday I was meeting my friends from college, Pilu and I were having lunch at the new Indian restaurant (and only one, I might add) in town (they have Kingfisher!! = Indian beer) and then we were meeting Esther and Sara for coffee, so I decided to make both recipes on Thursday to have them ready for Friday. I wanted to make half the recipe for both, but since the matcha chocolate cupcakes recipe calls for an egg, and seriously, half an egg? Well, I made 12 of those, and 6 of the masala chai cupcakes!

According to Alma's scale of goodness based on how long the mmmmmmm is, I have to say the masala chai cupcakes were the supreme champion! The three of them kept going "mmmmmmmmmmmmmmmmmmmmmmmmmmm" at every bite! And I have to say they were damned tasty! The buttercream was delicious, I added a bit of the milk with the tea even if wasn't supposed to be part of the recipe for it, but a bit of milk is a good idea to make the buttercream manageable and not too thick! Which was the problem with the matcha buttercream, a bit too thick, even if I added a bit of milk too. But experimenting is half the fun! I'm thinking of trying the buttercream in this chai recipe with the vegan chai cupcakes from the "Vegan Cupcakes Take Over The World". And I think I really need to try the recipe for green tea buttercream from the Primrose Bakery book.




And aside from that, I also wanted to share a recipe from the book that I modified to make it a bit more "parents-with-high-cholesterol" friendly, and also added a bit more spice to it, I made it with my friend Irene on Sunday morning!:


Carrot Cake Cupcakes
Makes 12-15

Ingredients:

- 175 gr whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda/bicarbonate of soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1 a pinch f salk
- 2 eggs
- 200 gr brown sugar
- 100 ml vegetable oil
- 1/2 teaspoon vanilla extract
- 2 large carrots, peeled and finely grated
- 40 gr canned crushed pineapple, drained (or just finely chop canned pineapple and drain well)
- 3 tablespoons chopped walnuts.

Method:

- Preheat the oven to 180ºC/350ºF. Line the cupcake pan with paper liners
- Sift together the flour, baking powder, bicarbonate of soda, ground cinnamon, ground ginger and salt in a bowl.
- Put the eggs and sugar in a mixing bowl and beat until thick and well combined. Add the oil and the vanilla and beat until smooth.
- Add the sifted dry ingredients and beat on low speed/by hand until combined. Stir in the carrots, pineapple and walnuts and mix well.
- Divide the mixture between the muffin cases. Bake in the preheated over for 22-25 minutes or until well risen and a toothpick/cake tester comes out clean. Remove from the oven and let cool in the pan for 5 minutes and then on a wire rack till they're cool enough to decorate.

I used the Cream Cheese Frosting according to the book directions, but I think next time, I'll just make them without frosting, cause they're so very yummy, very fluffly and very moisty! And if I make the frosting, I'll use the one Alma gave us in her latest workshop!

Monday Munchies: Cupcakes Workshop with Alma's Cupcakes!!

Hello everyone! How's the week starting? I hope very good, and if not... take a peek at all the yummy pics I'm sharing with you in this entry, and you'll be sure to cheer up!


This past Saturday I finally attended a course/workshop by Alma of Alma's Cupcakes and Objetivo: Cupcake Perfecto for beginners. After reading Alma's blog, trying some of recipes and seeing all her amazing progress in the world of cakes, cupcakes and cookies, I was extremely excited to attend this 4 hour-class and it was everything I expected and more! Not only I got tons of practical tips and recommendations, learnt about fondant and ingredients, but also had an absolute blast with Alma, her mother (the helper) and the other ladies that were attending the workshop (with my friend Esther too!).


Since my poor brain it's not at its best today, after two night shifts on a row, and depriving myself of sleep during the day so I can sleep tonight, I'm just gonna say a few things: I'm even more obsessed with cupcakes and baking in general, I have a mile long list of things to buy and I NEED A KITCHEN AID!!!

Monday Munchies: Alma's Cupcakes!

Hello everyone! A short (and sweet) blog entry for today! I work a double shift, so after working morning shift, I need to have a decent nap before going back to work night shift. And since last week has been pretty busy too, I have no entry ready, no recipe and no book...


So I decided to do a different sort of Monday Munchies entry! I'm sharing a blog and a website that you all need to know! Alma's Cupcakes and Objetivo Cupcakes! Both are the brain (& hand) child of Alma, an amazing Spanish lady even more obsessed with cupcakes than I am, and that is a total pro at them! She's such a pro, that she's offering courses/workshops and I've signed up for the beginners one in November (rest assured, there'll be a blog entry about it for sure!).


Most of her recipes are in Spanish, but she also has a good number of them in English, so check out both her website & blog! Her recipes are amazing, and all her info has helped me locate supplies that won't cost an arm & a leg to ship! Yay for cupcakes boxes in Madrid!

A birthday recap, with handmade and recipes galore!

Hello everyone! Friday is once again here, and once again I work the weekend...


That's why I wanna share a lil recap of my birthday celebrations, with some photos and recipes, to face Friday and working weekend, with yummy food and fun times!


Last Tuesday was my birthday, so I chose the lunch menu, and went with cold curry rice with apple chunks & raisins, and sweet & sour chicken brochettes! As you can see, they were both super yummy and really easy to make! The key for the brochettes was the marinade, half honey & half soy sauce.






Then, we had my bro, sis-in-law and nephews over for dinner, and we had some nice grilled cutlets and other meats. I decided to make something different for dessert, so I made Kheer, an Indian rice pudding. I really like it, but my bro wasn't too keen on it. Joel, my older nephew loved it, till he chewed one of the cardamom seeds!




On Saturday, I was doing a joint b-day celebration with my friend Emilio, so we decided that I'd make the desserts and also try my hand at making some Indian dish, to add something different to the usual dinner food!


For dessert, I decided to go for Chocolate Mud Cake, you can find the recipe here, in the lovely Rose's blog. Lovely chocolate-y goodness, that I dunno why decided to not be fully baked in the centre and collapsed, which made me improvise and turn it into a donut cake, with an extra spiced chocolate frosting layer all over it... too bad I have no pics of the finished cake, cause I made it on Friday, but had to save the disaster on Saturday before leaving for the dinner, and I was too much in a hurry to take pics! It looked quite nice, and tasted delicious!





I also made some really yummy Mojito cupcakes with this recipe, from Heaven is a Cupcake! I had to improvise a bit, since I couldn't get any peppermint flavouring, but I decided to skip the issue by using a ready-mix Mojito cocktail, instead of just white rum! ;)






These I didn't frost cause I didn't have the right way to take them with me to my friend's house where the dinner was gonna take place without the frosting arriving all wonky! They were a real hit, very chocolate-y, with a hint of mojito and really moist and fluffy! I can't wait to make them again for my friend Pilu's b-day, with frosting this time!






For the Indian dish, I turned to one of my recently purchased Indian cooking books, where I found the recipe for Seekh Kebabs, G's favourite dish, Miss Masala: Real Indian Cooking for Busy Living! It's a great book, with loads of pointers on how to deal with all the unknown spices and ways of cooking, and with really yummy recipes! She also has a blog, with more yummy recipes!






Making seekh kebabs is not too laborious a process, cause I'm not the biggest fan of cooking, but I can't wait to make more! I made the seekhs a bit more mild than the recipe asked for, for two reasons: first, I was missing the chilli powder, couldn't find it anywhere here, and online it wouldn't have arrived in time (I got it now, ready for next time); and second, none of my friends are really used to trying spicy Indian food.







They were a real success, everyone loved their different taste, so I plan to make them more often!




I got many presents for my b-day, though only the ones I got for myself were handmade, so I'm gonna show off, what I gave Emilio for his b-day:

I really love this shot, it's still one of my favourites. I took it last year in Wisconsin, and it's the shore of its namesake river.




I packaged them, and since I didn't have a manly & big enough wrapping paper, I decided to use a pair of my Skull And CrossBuns stamps to make it look more like a present! I also decorated the custom birthday card that Deb from On Cupcake Moon made for me!




Since Emilio loves cooking, I also got him a set of grilling spices from Purpose Design. As always, they come with super cute woody tags, and with recipes and suggestions on how to use them best!



And in case you're wondering, we (I) finished the open mojito bottle, after all, you don't turn 30 every day!
